This is the recipe I came up with. I love lentil soup a lot and I’m glad I finally have a recipe I like and that’s fairly simple. Just keep in mind, dry lentils take a bit to soften up and they use expand quite a bit.

Ingredients:

• 2 Tbsp. olive oil
• 1 diced onion
• 3 celery stalks, chopped
• 3 carrots, chopped
• 1 can diced tomato (I use the olive oil and garlic tomatoes)
• 1/2 can tomato paste
• minced garlic
• 2 bay leaves
• 2 1/2 cups lentils
• 10 cups water/broth
• oregano, thyme, lemon pepper
• salt, pepper

Cook the veg until soft, add tomato, lentil, water/broth, bay leaves.

Spice to taste.

Bring to a boil. Lower heat to a simmer. 

Cook until lentils are soft. Adjust spices if necessary. 

Enjoy.
